Easy Weeknight Dinner Ideas

With working all day and with summer soon approaching, the last thing I want to do is spend a lot of time in the kitchen. We do not have central air, so it isn’t as simple as turning it on and cooking in a cool kitchen. It is otherworldly hot in there sometimes. So the less actual cooking I have to do, the better.


Here are some simple and easy recipes I like to make on those days;


Quesadillas; If we make these with chicken, I usually grab some chicken that is already cooked from the fridge. If there is no leftover chicken, I just cook some real quick. But this involves flour tortillas, cheese, and chicken. Simple enough! And either butter or oil if you don’t have a non-stick pan. I do then add corn for aside. Got to make sure the kids eat their vegetable! Plus, corn is one of two vegetables that my eleven-year-old will even eat.



Spaghetti; normally made in our house with beef spaghetti sauce. But you can make it without it as we don’t buy the pre-made beef sauce. We buy regular sauce and add the beef ourselves. This is easier as my eleven-year-old loves the beef, but my four-year-old does not care much for it. So, we just sprinkle it on top with the parmesan cheese.


Cheesy Potato Soup; this is made in the slow cooker. Using the slow cooker is nice as well, then you don’t have to be over the hot stove. The recipe I use for this one can be found here: Cheesy Potato Slow-Cooker Soup Recipe - Pillsbury.com



Lettuce wraps; The way we make ours is we use bulgogi. Bulgogi is marinated grilled beef. We cook that, and then we fry up some vegetables (any kind you like). And then wrap it in lettuce! If you prefer a type of lettuce over another, then use it. We go back and forth between butter lettuce and red or green leaf lettuce.
